Description
Soy flour, whose fat has been removed by the enzyme papain, is digested to produce soy peptone. Soy peptone is a non-animal peptone that contains a wide range of nutrients. Soy peptone is particularly high in carbohydrates and vitamins, which, along with its nitrogen content, makes it a suitable choice for aiding the growth of fastidious and damaged microorganisms. Due to the high level of fermentable carbohydrates in soy peptone, it is not a suitable option for fermentation studies or the identification of microorganisms based on the type of fermentable sugar. Because of its plant origin, using soy peptone in vaccine production reduces the risk of BSE prion contamination.
